Poles never made it to Egypt but the pyramid idea could be used by a pole ! Try making these ‘potato pyramids’ to delight the picky kid eaters in your family.
1/4 cup olive oil
3 tbls grated Parmigiano
1/4 tsp oregano
1/2 tsp basil
salt & pepper to taste
1 potato per person, scrubbed & dried
slice into 1/4″ slices
toss in marinade and let stand 30 mins
Stack potatoes in layers on parchement paper
Bake in 400C oven for 35-40 mins
Sprinkle with paprika for colour upon serving
Serve 1 stack per person.
