Prison food deserving of full freedom.
CHEDDAR CHEESE & MASHED POTATOES PIE
An ex-prisoner of Glenochil Detention Centre, Scotland writes a recipe of the Sunday night dish he remembers from his time of incarceration at that prison. Conditions were terrible but he took away a lasting recipe. The prison produced two things: an offender who has served his time and a recipe which should be freed for everyone to try.
CHEDDAR CHEESE PIE
3-4 large potatoes, mashed in your favourite method
1 ½ cups, shredded cheddar cheese, age is diners’ preference
salt, pepper, marjoram, thyme, garlic powder
1/3 cup chopped braised onion
¼ cup homemade bacon bits
Mix the potatoes and cheese, and optional ingredients well in a food mixture. Spread on to a greased baking sheet or ungreased parchment paper. Bake in 350F oven for 45 mins. Time depends on how crispy and well done you want. Like making a pizza, it can be really well done or less so. Cook’s preference.
The inmates sliced it into squares and made jam sandwiches with strawberry or raspberry jam.
The dish is similar to Lithuanian dish called kugelis.
Serve sliced squares with a dollop of sour cream and chopped chives.
