Vegan Sweet Potato Chocolate Chia Pudding

Ingredients:

1 bar (100 g) PC Organics European Dark Chocolate, chopped
1 cup (250 mL) PC Organics Dairy-Free Kefir Probiotic Fermented Coconut Milk

½ cup (125 mL) mashed peeled cooked sweet potato, cooled

¼ cup (50 mL) PC Organics Sugar

2 Tbsp (25 mL) PC Organics Milled Black Chia Seeds
Pinch (0.5 mL) salt

Instructions:
1. Place chocolate in a small microwave-safe bowl. Microwave 30 seconds; stir and repeat until melted. Let cool slightly.

  1. Transfer chocolate to blender; add kefir, sweet potato, sugar, chia and salt. Blend, stopping to scrape down sides, until smooth and creamy, about 2 minutes.

Makes 4 servings.
Per serving: 270 calories, fat 13 g (saturated fat 7g), sodium 90 mg,
carbohydrate 36 g, fibre 2 g, protein 3 g
